Bespoke Gin Experience

Lord Byron Distillery is a family owned distillery, located in Byron that is carbon neutral and zero waste. We use locally sourced ingredients to handcraft naturally better drinks free from artificial flavours, colours or preservatives.

We started our micro distillery because what we drink is as important as what we eat. We put both into our bodies. Our business is based on the belief that you deserve to know where your drinks come from and how they are made. We hand batch our Spirit of Byron drinks range on site using locally sourced ingredients – water from our hinterland farm and molasses from the local farmer owned milling cooperative. We hand make rum, vodka and liqueurs for us all to enjoy responsibly.

We like to help people give their special day a personal and local touch through a couple of unique experiences. We can help you make your own bespoke gin and/or open our cellar door especially for your hens and bucks celebrations. If you would like to make your own gin, then, in the setting of a working distillery you will be given expert guidance from friendly staff each step of the way. You will choose your own botanicals and add them to your own micro still. After you have distilled your gin you will bottle and label your very own bespoke gin. At the end of the course, you will have your very own gin to take home and share with friends. Later we can batch distill to your recipe your very own bespoke gin for your special day. We bottle in 700ml bottles as well as 50ml wedding favour gift bottles.

Our drinks are good in mixers but are awesome in cocktails. We have a vodka that makes an incredible expresso martini. The mouth feel and flavour of our vodka perfectly complements the coffee. We have overproof and standard rum which are great in mojitos and/or nuclear daiquiris. Our aged rum is a great sipping rum alone or perfect in a rum old fashioned.   We also have our own limoncello made from bush lemon peels from our farm and a Cumquat liquor made from cumquats grown at the Fig Tree farm. Our liquor recipes were given to us from our relatives in Naples and are delicious served straight from the freezer.
